Cinnamon Muffins Cinnamon Muffins

These muffins may sound plain and boring, but boy, do they ever taste good with a cup of Darjeeling Happy Valley tea!






  • 1 1/2 cups flour
  • 1/2 cup white sugar
  • 1/4 cup brown sugar, packed
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cinnamon
  • 1 egg, beaten
  • 1/2 cup vegetable oil
  • 1/2 cup milk

Sift together flour, sugars, baking powder, salt and cinnamon. In a separate bowl, combine egg, oil and milk. Add to dry ingredients. Stir just enough to moisten.

Fill greased muffin tins ~2/3 full and bake at 400 F (204 C) for 16-18 minutes. Turn pans around 1/2 through baking.
